MOROCCAN CHICKPEA SALAD

Made this for dinner tonight!! So yummy. Thanks to Jordan B. for sharing this with me. It's a new family fave!


1 stalk celery, diced
1 green pepper, diced
1 medium tomato, diced
1 medium onion or 6 green onions, diced
1 can chickpeas, drained and rinsed
1/2 cup feta, diced


Dressing

2 tbsp olive oil
3 tbsp red wine vinegar
2 tbsp lemon juice
1 tbsp fresh parsley
1 tsp fresh mint
1 tbsp & 1 tsp of dried groun cumin
salt & pepper to taste

Toss diced vegetables and chickpeas. Stir dressing ingredients together and pour over veggies. Toss.

Delicious!
